Curried Butternut Squash Noodle Soup

Serves 8.


1 package Namaste Foods Say Cheez Pasta Dinner
2 tbsp extra virgin olive oil
1 medium onion, chopped
2-3 stalks celery, chopped
2-3 tsp GF curry powder
4 cups Butternut squash, peeled and cubed (1”) 
4 to 6 cups vegetable or chicken broth
¼ tsp nutmeg to taste (optional)
1 tbsp maple syrup or agave nectar to taste
1 cup coconut milk
salt and pepper to taste


  1. Cook the pasta (on the el dente side) according to the package directions, drain, rinse in cool water and set aside.
  2. Heat olive oil in a soup pot over medium heat. Add onion, celery and curry. Cook until onion softens. Add squash, broth and Namaste seasoning packet. Cover pot and bring to simmer. Simmer approximately 30 minutes or until squash is very soft and fork tender. Add more water if squash begins to stick to the pot.
  3. Puree soup with an immersion blender or in food processor in batches if necessary. Stir in the maple syrup, nutmeg (if using) and coconut milk. Season with salt and pepper to taste. Add pasta, warm through and serve.


  • Serving suggestion: Garnish with chopped cilantro and/or dollop of good plain yogurt.
