Ham and Cheese Crepes
Ingredients1 1/2 cups Namaste Waffle & Pancake Mix
1 1/3 cups milk
1 tbsp. oil
1/4 tsp. salt
1/8 tsp. black pepper (optional)
1 1/2 cups diced ham
1 1/2 cups shredded cheddar or Swiss cheese
- In a large mixing bowl, whisk together mix, salt, egg, milk and oil. Stir until well combined and you have a smooth batter.
- Heat a lightly oiled pan over medium heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly.
- Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, flip the crepe and top with about 1/4 cup each shredded cheese and diced ham. Cook until cheese is melted. Fold or roll and serve hot.
