I just received my order and the mix is in a box and the name is a little different. Has anything else changed?

We've just finished giving our baking mix packages a fresh new look, but they are still the same products you know and love. Some product names have changed slightly such as the Bread and Muffins. The new names are Bread & Roll and Muffin & Scone Mix. We have included the directions to make more variations with the same products because we are all about choices at Namaste Foods! We hope you love the new look as much as we do!

You used to offer your products in bulk on your website but I don’t see them anymore. Can I still buy Namaste Foods products in bulk?

The answer is ‘yes’ and ‘no.’ While we know some customers prefer to buy our great products in larger bulk quantities, the vast majority prefer the individual retail units. Each bulk order was packaged and filled by hand at the time the order was placed and that process has just become too time consuming and too costly for us. However, our website now offers our products individually and by the case at a savings. In addition, Amazon.com carries all of our items by the case at a discount and often offers free shipping as well.

I want to buy your product locally and I don't see a store near me on your store locator. What can I do?

Namaste Foods products are available in many, many stores nationwide. However, if your local store does not yet carry our exceptional products, please print this letter and bring it to the store manager. Once you've done that, please send us a quick note telling us the name of the store. We will follow up with them and do our best to bring Namaste Foods products to where you shop (and we're successful over 90 percent of the time!)

I am ordering your product but wondered about the XANTHAN GUM. Your ad says corn-free. Doesn't xanthan gum have corn in it or a by product?

Namaste Foods uses xanthan gum that is NOT derived from corn or corn sources. It is certified by the manufacturer to be free of all carbohydrates including corn, wheat and soy. Regardless of the source carbohydrate, there is no trace of it left after going through the process of making xanthan gum. If you are reacting to xanthan gum it is much more likely that you have a sensitivity to xanthan gum itself, rather than the source it was grown on.

Would you please explain to me what EVAPORATED CANE JUICE is? Is this a by-product of cane sugar?

Evaporated cane juice is a healthy alternative to refined sugar. While both sweeteners are made from sugar cane, evaporated cane juice does not undergo the same degree of processing that refined sugar does. Therefore, unlike refined sugar, it retains more of the nutrients found in sugar cane.

I love your products but I am concerned about recent studies on arsenic in rice. Is your rice/rice flour safe?

We appreciate your question and know this is important. Arsenic can be found naturally on earth in small concentrations. It occurs in soil and minerals and it may enter air, water and land through wind-blown dust and water run-off. Namaste Foods rice sources are from California and they require strict testing annually of all raw goods. We receive documentation from our supplier certifying there is no arsenic in the rice/rice flour we buy. Namaste Foods goes to great lengths to provide our customers with the safest possible products.

Can a powdered egg substitute be used in place of eggs? Do you have any other egg substitute suggestions?

Most of our products are formulated to be used with eggs. However, we have many customers who use a powdered egg substitute with success though some amount of experimenting may be necessary. For suggestions when baking in high altitudes with egg substitutes, please see high altitude section below.

Our customers have found that adding the dry egg replacer directly to the dry mix without reconstituting, then following the package instructions works best. Some have also reported good results when increasing the amount of powdered egg replacer called for on package directions.
Other suggestions:

1 TBLS flax seeds plus 3 TBLS water replaces one egg. Finely grind 1 TBLS whole flaxseeds in a blender or coffee grinder, or use 2 1/2 TBLS pre-ground flaxseeds. Transfer to a bowl and beat in 3 TBLS water using a whisk or fork. It will become very gooey and gelatinous, much like an egg white.

Egg Substitute using Tofu

Attention: Tofu contains soy!!

Replace each egg with 1/4 Lb of firm tofu. Combine tofu, crumbled into a food processor, with the oil and water called for in the recipe, and puree in food processor until smooth, then add to mix.
Suggestions from a customers:

For each egg, substitute one of the following in your recipe.

1 tsp baking powder + 1 TBLS water + 1 TBLS vinegar

1 tsp yeast dissolved in 1/4 cup warm water

1 TBLS apricot, prune or apple puree

1 1/2 TBLS water + 1 1/2 TBLS oil + 1 tsp baking powder

1 packet gelatin + 2 TBLS warm water (don't mix until ready to use)

Another vegan suggestion from a customer when making the cake mixes is to add 1 cup of soy milk, 1/2 cup of oil and 2 TBLS of cider vinegar.

There are small black particles in some of your baking mixes, can you tell me what this is?

It is a surprise to most people but we use real vanilla! What you see in your mix is bits of ground vanilla bean. You can expect to see these in our Waffle/Pancake Mix, Vanilla Cake, Muffins, Cookies and Blondies.

Can I always substitute your Perfect Flour Blend cup for cup in all my recipes?

For most simple recipes, the answer is yes. Some recipes may require more flour/liquid to be added or some experimentation. One customer recommends adding 2-6 additional tablespoons if texture seems to moist or soft. Recipes that include yeast are more finicky. We have several recipes that include yeast on the website and recommend you try our Granny's GF bread recipe when making bread.

What is in your Pizza Crust Italian Seasonings?

Our Pizza Crust seasoning contains granulated garlic and onion, parsley, rosemary, sage, thyme, basil, oregano and marjoram.

I liked the original baking instructions for your Pizza Crust better than the new method. Can you please give me those directions?

Original Namaste Foods Baking Directions for
One 14" Pizza Crust or 4 Mini Crusts:
What You Need:
1 Cup Water
1 1/2 Teaspoons
Olive or Other Oil
Heat oven to 425° F. Generously oil a pizza stone or pan, then rub some on a rolling pin.
Combine 1 cup warm water and 1 1/2 teaspoons olive or other oil to 2 3/4 cups of dry mix. Beat with an electric mixer for 3 minutes on high speed. Form dough into a ball then put on your stone or pan. Roll out to about 1/4" thick.

Bake for approximately 10 minutes on lowest oven rack. (You can freeze for later use at this point.)
Add sauce and whatever toppings you like. Brush edge of crust with olive oil. If the bottom of the crust looks brown, move pizza to the middle rack and bake another 8-12 minutes. Otherwise, leave it on the bottom rack and bake. Enjoy!

What are the natural cheese flavors in the Say Cheez Pasta?

They are a prepared blend of natural organic acids, fatty acids, aldehydes and ketones that are used to produce a particular characteristic taste under food grade processed conditions: they are free of dairy allergens/protein components and deemed Kosher Pareve.

Do you have any high altitude baking suggestions?

Yes! Please note: these suggestions are for elevations above 5500 ft up to 8500 ft.
Tested using eggs and egg replacers.

Please note: using egg replacers will change the texture in the final product.

Perfect Flour Blend - Granny's Gluten Free Bread Oven Baked OR Bread Machine

When using eggs, follow directions on the package. It results in a perfectly dense loaf with delicious taste, full and robust volume. Note: No adjustments necessary.

When using egg replacer follow manufacturer's directions of egg replacer and then follow recipe directions as noted on the package. Although this has a different texture and slightly different flavor than using eggs, the bread will rise normally and with equally full and robust flavor.

Cake Mixes (tested Spice and Chocolate Cakes)

Use 2 tblsp less water, same amount of oil and increase oven temperature 25 degrees.

For Chocolate Cake bake time: 30 minutes after toothpick test. It has perfect texture and volume. For egg replacers: use same adjustments as mentioned.

For Spice Cake bake time: check at 30-35 minutes with toothpick test. Texture and volume is excellent.

Be sure to blend the mix well (approx. 5 minutes) to allow volume and expansion during baking.

Brownies

No adjustments necessary when using eggs and bake as directed.

Egg replacers: follow egg replacer directions PLUS 3 tblsp additional water. Bake as directed on packaging.

Cookies

Decrease water by 2 tblsp and bake approx 11 minutes. Nice volume and chewy texture.

Egg replacer: same adjustments as above. Taste and texture will naturally be different.

Muffins

Decrease water by 2 tblsp and bake 12 minutes. For additional rise, add an extra egg or 1 tsp baking powder. Bake as directed on packaging.

Egg replacer: follow adjustments above and bake 12 minutes.

Bread Mix (note: not recommended for egg replacers)

Decrease water by 2 tblsp. This is the only adjustment you should need to make. Follow remaining directions on packaging whether using bread machine or oven-baking.

I’d like to use my bread machine to make the Bread mix. Which settings should I use?

Use the 1 to 1 1/2 lb loaf setting with a medium color crust. Or if there is a gluten-free setting you can use that as well.

GMO Statement

All Namaste Foods LLC products and ingredients are, to the best our knowledge, considered to be non-GMO in that they are produced with the addition of no genetically modified organisms.

Are you going to join the Non-GMO Project?

Yes, we intend to join the project as soon as budgets allow. Each year, we obtain certifications such as GFCO (gluten-free certified), Kosher, NWBOC (women owned business) and so on. In addition we undergo third party audits to assure the highest quality standards and practices are met. Each of these costs a considerable amount of money as does joining the Non-GMO Project. In addition, Namaste Foods products contain no ‘high risk’ ingredients according to the Non-GMO Project website (those being canola, corn, cotton, papaya, soy, sugar beets, zucchini and yellow squash.) Each of our suppliers is asked to confirm that all raw goods sold to us are not genetically modified. So while we are not yet formally certified, we are certain that we are offering safe, non-GMO products to our consumers.

Can I use a bundt pan and are there adjustments I need to consider?

Yes you can! Prepare as directed and depending on the caliberation of your oven, bake time should be 45-50 minutes. Be sure to toothpick test for doneness.

What is in your natural non-dairy butter flavor?

Our non-dairy butter flavor contains dextrose, gum arabic, medium chain triglycerides, silicon dioxide (anti-caking), and natural flavor.
